Quinoa Salad

Ingredients:

·      1 Cup Dry Quinoa of choice (we like TriColor, Trader Joe’s brand)

·      3 Peppers – Red, Orange and Yellow

·      4 Mini Cucumbers

·      12-16oz Cherry Tomatoes

·      8oz Feta Cheese (prefer block over crumbles)

·      1/3 Red Wine Vinegar

·      2 Tbsp Italian Seasoning

·      Salt and Pepper to taste

Directions:

1)    Cook Quinoa according to instructions – using 1 cup dry quinoa with 2 cups boiling water.  Once cooked, let cool.

2)    While cooling, cut all vegetables and dice/crumble feta.

3)    Mix all ingredients together and refrigerate.
